Strawberry Pavlova Roll

4 egg whites
3/4 cup sugar
1 tsp white vinegar
1 tsp cornstarch
1 tsp vanilla essence
300 ml whipped cream
250 g fresh strawberries
2 passionfruit optional

Line a jelly roll pan with baking paper. Preheat oven to 170C.
Beat egg whites until soft peaks form.
Add sugar gradually and continue beating until mixture is stiff and glossy and all sugar is dissolved.
Gently fold through vanilla, cornstarch and vinegar.
Spread meringue evenly into prepared tin. Bake for 12-15 minutes.
Allow to cool completely before turning out onto another sheet baking paper, sprinkled with sugar.

Spread with whipped cream and top with sliced strawberries.

Roll up from long side and place on serving plate.

Decorate top with strawberries and passionfruit if desired.
I decorated with a chocolate drizzle.
